Whole Grain Seeded Harvest Rolls

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 1/4 cups warm water
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 cup mixed seeds (such as sesame seeds, flaxseeds, pumpkin seeds, sunflower seeds, etc.)
  • Additional seeds for topping (optional)
  • Egg wash (1 beaten egg mixed with a tablespoon of water) for brushing (optional)

Instructions:

  1. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, instant yeast, salt, and mixed seeds.
  2. In a separate bowl, mix the warm water, honey or maple syrup, and olive oil until well combined.
  3. Make a well in the center of the dry ingredients and pour in the wet mixture.
  4. Stir the ingredients together until a dough forms. If the dough is too sticky, gradually add a little more flour. If it’s too dry, add a bit more warm water.
  5. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
  6. Grease a clean bowl with oil or butter, place the dough inside, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
  7. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  8. Punch down the risen dough gently to release the air bubbles. Divide the dough into equal-sized portions and shape them into rolls.
  9. Place the rolls on the prepared baking sheet. If desired, brush the tops of the rolls with egg wash and sprinkle additional seeds for topping.
  10. Cover the rolls loosely with a clean kitchen towel and let them rise again for about 30-45 minutes, or until they have doubled in size.
  11. Bake the rolls in the preheated oven for 15-20 minutes or until they turn golden brown and sound hollow when tapped on the bottom.
  12. Remove the rolls from the oven and let them cool on a wire rack.
