Western Style Ham, Egg, and Pepper Jack Bagel

Ingredients:

  • 4 bagels, sliced and toasted
  • 4 slices of ham
  • 4 large eggs
  • 4 slices of pepper jack cheese (or your preferred cheese)
  • 1 bell pepper, diced (red or green, or a mix of both)
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Butter or cooking spray for frying

Instructions:

  1. In a skillet, heat olive oil over medium heat. Add diced bell pepper and onion. Sauté until they become tender and slightly caramelized. Season with salt and pepper to taste. Remove the vegetables from the skillet and set aside.
  2. In the same skillet, cook the ham slices until they are warmed through and slightly browned. Remove from the skillet and set aside.
  3. Crack the eggs into the skillet and cook them to your preferred style (fried or scrambled). Season with salt and pepper.
  4. Once the eggs are cooked, place a slice of pepper jack cheese on top of each egg to melt slightly.
  5. To assemble the sandwiches, place a slice of ham on the bottom half of each toasted bagel.
  6. Top the ham with a cooked egg topped with melted cheese.
  7. Spoon the sautéed bell peppers and onions on top of the cheese.
  8. Close the sandwich with the other half of the bagel.
  9. Heat a skillet or griddle over medium heat and add a bit of butter or cooking spray.
  10. Place the assembled sandwiches onto the skillet or griddle and cook for about 2-3 minutes on each side, pressing gently with a spatula, until the bagels turn golden brown and crispy.
  11. Once both sides are golden and the cheese is melted, remove the sandwiches from the skillet.
  12. Serve your delicious Western-style ham, egg, and pepper jack bagel sandwiches warm and enjoy!
