Veggie Delight Avocado, Spinach, and Tomato Ciabatta

Ingredients:

  • 4 ciabatta rolls, sliced in half
  • 2 ripe avocados, peeled, pitted, and sliced
  • 2 cups fresh spinach leaves
  • 2 tomatoes, sliced
  • 1/4 cup sliced red onions (optional)
  • 4 tablespoons pesto sauce (store-bought or homemade)
  • Salt and pepper, to taste
  • Olive oil (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Place the ciabatta rolls on a baking sheet, sliced side up, and toast them in the oven until they’re lightly crispy, about 5-7 minutes. Remove and set aside.
  2. Slice the avocados, tomatoes, and red onions (if using) thinly.
  3. Spread a tablespoon of pesto sauce on each bottom half of the ciabatta rolls.
  4. Layer the sliced avocados on top of the pesto-covered ciabatta.
  5. Season the avocado slices with salt and pepper to taste.
  6. Next, add a handful of fresh spinach leaves on top of the avocado slices.
  7. Layer the sliced tomatoes (and red onions if using) over the spinach.
  8. Optionally, drizzle a little olive oil over the tomatoes for added flavor.
  9. Top each sandwich with the other half of the ciabatta rolls to form sandwiches.
  10. Serve your veggie delight avocado, spinach, and tomato ciabatta sandwiches immediately and enjoy!
