Sweet Potato Sunrise Burger

Ingredients:

For the sweet potato patties:

  • 2 medium sweet potatoes, peeled and grated
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup bread crumbs or almond meal
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)

For assembling the burger:

  • Whole grain burger buns
  • Sliced avocado
  • Sliced tomato
  • Lettuce leaves
  • Sliced red onion
  • Sriracha mayo or preferred sauce

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. In a mixing bowl, combine the grated sweet potatoes, drained black beans, bread crumbs or almond meal, finely chopped red onion, minced garlic, ground cumin, paprika, chili powder, salt, and pepper. Mix everything thoroughly until well combined.
  3. Form the mixture into patties of your desired size and thickness. If the mixture is too moist, add a bit more bread crumbs or almond meal to help bind it together.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side until they are lightly browned.
  5. Transfer the partially cooked patties onto the prepared baking sheet and bake in the preheated oven for an additional 10-15 minutes, until they are cooked through and crispy on the outside.
  6. While the patties are baking, prepare the burger buns by toasting them lightly.
  7. To assemble the Sweet Potato Sunrise Burger, spread sriracha mayo or preferred sauce on the bottom half of the bun. Place the cooked sweet potato patty on top. Layer with sliced avocado, tomato, lettuce, red onion, or any other desired toppings. Add more sauce on the top half of the bun if desired.
  8. Serve the burgers immediately and relish the delicious flavors of the sweet potato combined with the savory toppings!
