Spinach Feta Fiesta Burger

Ingredients:

For the spinach feta patties:

  • 1 cup frozen spinach, thawed and drained
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup breadcrumbs (regular or gluten-free)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

For assembling the burger:

  • Whole grain burger buns
  • Sliced red bell pepper
  • Sliced red onion
  • Fresh lettuce leaves or baby spinach
  • Sliced cucumber
  • Tzatziki sauce or preferred sauce

Instructions:

  1. In a food processor, pulse the drained spinach, chickpeas, crumbled feta cheese, breadcrumbs, minced garlic, dried oregano, paprika, salt, and pepper until well combined. The mixture should have a chunky texture.
  2. Form the mixture into patties of your desired size and thickness.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and heated through.
  4. While the patties are cooking, prepare the burger buns by toasting them lightly.
  5. To assemble the Spinach Feta Fiesta Burger, spread tzatziki sauce or preferred sauce on the bottom half of the bun. Place the cooked spinach feta patty on top. Layer with sliced red bell pepper, red onion, fresh lettuce leaves or baby spinach, sliced cucumber, or any other desired toppings.
  6. Add the top half of the bun and secure the burger with a skewer if necessary.
