Ingredients:
- 8 slices of bread (whole grain, sourdough, or your preferred bread)
- 1 cup fresh spinach leaves, chopped
- 1 cup marinated artichoke hearts, drained and chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup mayonnaise or Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Butter, softened
Instructions:
- In a mixing bowl, combine the chopped spinach, chopped artichoke hearts, crumbled feta cheese, grated Parmesan cheese, minced garlic, mayonnaise or Greek yogurt, and olive oil. Mix until well combined. Season with salt and pepper to taste.
- Butter one side of each slice of bread with the softened butter.
- Spread a generous amount of the spinach and artichoke mixture on the unbuttered side of half of the bread slices.
- Place the remaining bread slices, buttered side facing outward, on top of the spinach and artichoke mixture to close the sandwiches.
- Preheat a grill pan, skillet, or panini press over medium heat.
- If using a grill pan or skillet, place the sandwiches on the preheated surface. Grill for about 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and crispy, and the filling is heated through.
- If using a panini press, follow the manufacturer’s instructions for grilling the sandwiches until they are toasted and the filling is warmed.
- Remove the sandwiches from the grill or press, slice them if desired, and serve hot.
