Ingredients:
For the black bean patties:
- 2 cans (15 oz each) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust to taste for spice)
- Salt and black pepper to taste
- 1 tablespoon olive oil (for cooking)
For assembling the burger:
- Burger buns (whole grain or preferred type)
- Sliced pepper jack cheese (optional)
- Sliced avocado
- Sliced tomato
- Lettuce leaves
- Sliced red onion
- Chipotle mayo or preferred spicy sauce
Instructions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, mash one can of black beans with a fork or potato masher until mostly smooth. Leave the other can of beans intact (this gives texture to the patties).
- Add bread crumbs, finely chopped red onion, minced garlic, chopped cilantro, ground cumin, chili powder, smoked paprika, cayenne pepper, salt, and black pepper to the bowl with the mashed beans. Mix everything together until well combined.
- Gently fold in the whole black beans into the mixture, being careful not to mash them completely.
- Form the mixture into patties of your desired size and thickness. Place them on the prepared baking sheet.
- Brush both sides of the patties lightly with olive oil.
- Bake the patties in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are firm and golden brown.
- If using cheese, place a slice of pepper jack on each patty during the last few minutes of baking to allow it to melt.
- While the patties are baking, prepare the burger buns by toasting them lightly.
- To assemble the Spicy Black Bean Bliss Burger, spread chipotle mayo or preferred spicy sauce on the bottom half of the bun. Place the cooked patty on top. Layer with sliced avocado, tomato, lettuce, red onion, or any other desired toppings. Add more sauce on the top half of the bun if desired.
- Serve the burgers immediately and enjoy the spicy, flavorful goodness!
