Roast Beef Panini with Horseradish Mayo

Ingredients:

For the Horseradish Mayo:

  • 1/4 cup mayonnaise
  • 1-2 tablespoons prepared horseradish (adjust to taste)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

For the Panini:

  • Sliced roast beef (approximately 1/4 pound per sandwich)
  • Sliced cheese (such as provolone or Swiss)
  • Ciabatta bread or any preferred artisan bread, sliced
  • Butter or olive oil for grilling

Instructions:

  1. Prepare the horseradish mayo by combining the mayonnaise, prepared horseradish, lemon juice, salt, and pepper in a small bowl. Adjust the horseradish amount based on your desired level of spiciness. Mix well and set it aside.
  2. Preheat your panini press or grill pan.
  3. Assemble the sandwiches by spreading the horseradish mayo on one side of each slice of bread. Layer the roast beef and cheese on top of the mayo-spread side of the bread slices to create the sandwiches.
  4. Close the sandwiches with the remaining slices of bread.
  5. Lightly butter the outer sides of the bread slices or brush them with olive oil.
  6. Place the sandwiches onto the preheated panini press or grill pan. If using a grill pan, you can press the sandwiches down gently with a spatula.
  7. Grill the sandwiches for 3-4 minutes per side, or until the bread is golden brown, and the cheese is melted.
  8. Carefully remove the sandwiches from the grill, slice them in half diagonally, and serve hot.
