Pumpkin Soup Recipe

Presenting the most tempting Pumpkin Soup for you. It tastes like heaven and gives your taste buds the feel of Desi food.

Ingredients

  • 3 cups of Pumpkin (cooked & pureed) (should equal 3 cups after it is pureed.)
  • ½ cup of Pumpkin Seeds (toasted)
  • 1 medium Onion (minced)
  • 1 clove of Garlic (Lehsan) (minced)
  • 1 tsp. Dried Oregano
  • 1 tsp. Margarine or Olive Oil (Zaitoon Ka Tail)
  • 3 cups Chicken Broth (with reduced sodium)

Method

  • Heat margarine or olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook until softened.
  • Add the broth, pureed pumpkin and oregano and simmer for 30 minutes. Sprinkle with pumpkin seeds and serve.
