- Dijon mustard or preferred sauce
Instructions:
- In a shallow dish, whisk together balsamic vinegar, soy sauce or tamari, minced garlic, olive oil, salt, and pepper to create the marinade.
- Clean the portobello mushroom caps and remove the stems. Place them in the marinade, turning to coat both sides. Allow them to marinate for at least 30 minutes, flipping them occasionally to ensure even coating.
- Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates or pan to prevent sticking.
- Once the mushrooms have marinated, place them on the grill. Cook for approximately 4-5 minutes on each side, or until they are tender and have nice grill marks. Baste them with any remaining marinade while cooking.
- While the mushrooms are grilling, toast the burger buns lightly.
- To assemble the Portobello Mushroom Marvel burger, spread Dijon mustard or preferred sauce on the bottom half of the bun. Place the grilled portobello mushroom cap on top. Layer with sliced tomatoes, red onion, baby spinach or arugula, sliced avocado, and cheese if using.
- Add the top half of the bun and secure the burger with a skewer if necessary.
- Serve the Portobello Mushroom Marvel burger immediately and enjoy the rich, meaty flavor of the marinated portobello mushrooms!
