    An amino acid, one of the 20 building blocks of protein. A nonessential amino acid, glutamic acid is present in many animal and plant proteins. It is involved in ammonia metabolism and serves as a neurotransmitter. Glutamic acid was isolated from wheat gluten in 1866 and first synthesized in 1890. Symbol: Glu.

    A molecule derived from the sugar glucose by the addition of an amino group. Glucosamine is a component of a number of structures, including the blood group substances and cartilage. Glucosamine is currently in use as a nutritional supplement (often in combination with chondroitin) and is touted as a remedy for arthritic symptoms.

  • Gluconacetobacter liquefaciens

    Gluconacetobacter liquefaciens is a bacterium that infects plants. The bacterium can cause spoilage of alcoholic beverages, including beer, wine, and spirits. No cases of animal infection have been reported, and only one case of human infection has been described. This was reported in 2020 in a patient with immunodeficiency and liver cirrhosis. The patient eventually recovered from the infection.

  • Glucocorticoid

    A hormone that predominantly affects the metabolism of carbohydrates and, to a lesser extent, fats and proteins (and has other effects). Glucocorticoids are made in the outside portion (the cortex) of the adrenal gland and chemically classed as steroids. Cortisol is the major natural glucocorticoid. The term glucocorticoid also applies to equivalent hormones synthesized in the laboratory.
