Ingredients:
For the Chicken:
- 4-6 chicken pieces (thighs, drumsticks, breasts)
- 2 cups buttermilk
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- Vegetable oil for frying
For the Spicy Coating:
- ¼ cup cayenne pepper (adjust to taste for desired heat level)
- 2 tablespoons brown sugar
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon chili powder
- ½ cup vegetable oil (or melted lard)
- Additional 2 tablespoons of hot chicken oil (from frying)
For Serving:
- White bread slices or sandwich buns
- Pickles (optional)
Instructions:
- Marinate the chicken: Rinse the chicken pieces and pat them dry with paper towels. Place the chicken in a large bowl and pour the buttermilk over it. Cover the bowl and refrigerate for at least 1-2 hours or overnight.
- Prepare the spicy coating: In a small saucepan, combine the cayenne pepper, brown sugar, paprika, garlic powder, onion powder, chili powder, vegetable oil (or melted lard), and 2 tablespoons of the hot oil from frying. Heat over low heat for a few minutes, stirring constantly. Remove from heat and set aside.
- Heat the oil: In a large, heavy-bottomed skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C) over medium-high heat.
- Prepare the flour coating: In a shallow dish or bowl, mix the flour, salt, and black pepper.
- Coat the chicken: Remove the chicken from the buttermilk marinade, allowing any excess to drip off. Dredge each piece of chicken in the seasoned flour mixture, ensuring it’s evenly coated.
- Fry the chicken: Carefully place the coated chicken pieces into the hot oil, a few at a time, without overcrowding the pan. Fry the chicken for about 12-15 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
- Coat with spicy mixture: Once the chicken is cooked, use a brush to generously coat each piece with the prepared spicy mixture.
- Assemble and serve: Serve the Nashville Hot Chicken on white bread slices or sandwich buns, topped with pickles if desired.
