Ingredients
- 1 box vanilla cake mix
- 1 (12-oz.) can ginger beer
- 1/2 tsp. ground ginger
- 1 c. (2 sticks) butter, softened
- 4 c. powdered sugar
- 1/4 c. vodka
- 2 tbsp. lime juice
- 1 tbsp. lime zest
- Lime slices, for garnish
- Fresh mint, for garnish
Directions
- Make cupcakes: Preheat oven to 350° and line two muffin tins with 18 cupcake liners. In a large bowl, combine cake mix, ginger beer, and ground ginger. Divide between cupcake liners and bake until a toothpick inserted in middle of cupcake comes out clean, 18 minutes. Let cool.
- Make buttercream: In a large bowl using a hand mixer, beat butter until fluffy. Add 3 cups powdered sugar and beat until no lumps remain, then add vodka, lime juice and zest and beat again until combined. Add remaining cup of powdered sugar and beat until fully combined.
- Pipe onto cupcakes and garnish with a wedge of lime and a sprig of mint.
