Ingredients
- Light chicken stock 3 cups
- Prawns, shelled and de-veined 250 g
- Garlic cloves, minced 2
- Ginger, fresh 3 thin slices
- Fish sauce 1/4 cup
- Lemon grass, lower 1/3 portion only 2 stalks
- Green onions, sliced 2
- Mushrooms, sliced 1/2 cup
- Lime juice 1/4 cup
- Chilli paste, roasted 1 tsp
- Coriander leaves, chopped 1 tbsp
Method
- Bring the stock to a boil over medium heat.
- Add the ginger, garlic, fish sauce, lemon grass, green onions, mushrooms.
- Simmer for 2 minutes.
- Add the shrimps and reheat into boiling.
- Cook until the shrimps are pink, opaque and firm but no longer than 1 minute.
- When the shrimps are cooked, pour the lime juice, chilli paste in a serving bowl.
- Pour the soup into the bowl, stir and garnish with coriander leaves.
