Healthy Air Fryer Eggplant Parmesan

INGREDIENTS

  • 1 medium eggplant
  • 1 Tablespoon olive oil
  • 1 Tablespoon Italian seasoning
  • Salt and pepper to taste
  • 3 / 4 cup marinara sauce
  • ¾ shredded cup mozzarella cheese
  • ¼ grated parmesan cheese

INSTRUCTIONS

  1. Preheat air fryer to 360º F for 5 minutes
  2. Cut off and discard both ends of the eggplant and slice the eggplant in rounds.
  3. Combine the oil and seasoning in a large bowl until well combined, and toss the eggplant until well coated.
  4. Place the eggplant slices in the air fryer basket in a single layer and air fry to 360º F for 8-10 minutes or until the eggplant is soft and golden brown.
  5. Top the slices with 1 tablespoon marinara sauce and 1 tablespoon mozzarella cheese and sprinkle them with parmesan cheese. Cook for another 2 minutes, or until the cheese is melted
