Ingredients:
- 1 cup oat bran
- 1 cup whole wheat flour
- 1/2 cup ground flaxseed
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons honey or maple syrup (optional for sweetness)
- 1 cup plain yogurt or buttermilk
- 2 large eggs
- 1/4 cup melted butter or olive oil
- Additional seeds (such as sesame seeds or sunflower seeds) for topping (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the oat bran, whole wheat flour, ground flaxseed, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the honey or maple syrup (if using), plain yogurt or buttermilk, eggs, and melted butter or olive oil until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Let the batter sit for a few minutes to allow the oat bran and flaxseed to absorb some moisture and thicken the batter.
- Using a spoon or an ice cream scoop, portion the batter into rolls and place them on the prepared baking sheet, leaving some space between each roll.
- Optionally, sprinkle additional seeds (such as sesame seeds or sunflower seeds) on top of each roll for added texture.
- Bake the flaxseed oat bran fiber rolls in the preheated oven for 15-20 minutes or until they are golden brown and a toothpick inserted into the center of a roll comes out clean.
- Remove the rolls from the oven and let them cool on a wire rack.
These flaxseed oat bran fiber rolls are rich in fiber and nutrients, making them a healthy addition to your meals. Enjoy them warm or toasted, and pair them with soups, salads, or as a wholesome side dish!
