Flaxseed Oat Bran Fiber Rolls

Ingredients:

  • 1 cup oat bran
  • 1 cup whole wheat flour
  • 1/2 cup ground flaxseed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons honey or maple syrup (optional for sweetness)
  • 1 cup plain yogurt or buttermilk
  • 2 large eggs
  • 1/4 cup melted butter or olive oil
  • Additional seeds (such as sesame seeds or sunflower seeds) for topping (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oat bran, whole wheat flour, ground flaxseed, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the honey or maple syrup (if using), plain yogurt or buttermilk, eggs, and melted butter or olive oil until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Let the batter sit for a few minutes to allow the oat bran and flaxseed to absorb some moisture and thicken the batter.
  6. Using a spoon or an ice cream scoop, portion the batter into rolls and place them on the prepared baking sheet, leaving some space between each roll.

  8. Bake the flaxseed oat bran fiber rolls in the preheated oven for 15-20 minutes or until they are golden brown and a toothpick inserted into the center of a roll comes out clean.
  9. Remove the rolls from the oven and let them cool on a wire rack.
