Ingredients:

- 2 tablespoons oil (olive oil or vegetable oil)
- 1 onion, finely chopped

For the rolls:
- 1 sheet puff pastry, thawed according to package instructions
- Egg wash (1 egg beaten with 1 tablespoon water)
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat oil in a skillet over medium heat. Add chopped onions and sauté until translucent.
- Add minced garlic and ginger, and cook for another minute until fragrant.
- Stir in the curry powder, ground cumin, ground coriander, and turmeric powder. Cook for a minute to toast the spices.
- Add the mixed vegetables to the skillet and cook until they are tender but still have a slight crunch. Season with salt and pepper to taste. Stir in chopped cilantro if using. Remove from heat and let the mixture cool.
- On a lightly floured surface, roll out the puff pastry sheet into a rectangle.
- Spread the cooled curry vegetable mixture evenly over the entire surface of the puff pastry sheet.
- Starting from one long edge, tightly roll up the puff pastry sheet into a log.
- Use a sharp knife to slice the log into approximately 1-inch thick rolls.
- Place the rolls on the prepared baking sheet, cut-side down, leaving some space between each roll.
- Brush the tops of the rolls with the egg wash using a pastry brush.
- Bake in the preheated oven for 15-20 minutes or until the rolls are puffed and golden brown.
- Once done, remove the rolls from the oven and let them cool slightly on a wire rack before serving.
