Coconut Flour Banana Honey Rolls

Ingredients:

  • 1 cup coconut flour
  • 4 large ripe bananas, mashed
  • 4 eggs
  • 1/4 cup honey
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: sliced bananas for topping

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, eggs, honey, and vanilla extract. Mix well until thoroughly combined.
  3. Add the coconut flour, baking soda, and a pinch of salt to the banana mixture. Stir until you have a thick dough-like consistency. The coconut flour will absorb moisture and thicken the batter.
  4. Let the mixture sit for a couple of minutes to allow the coconut flour to absorb the moisture.
  5. Using slightly wet hands or a spoon, scoop out portions of the dough and shape them into rolls. Place the rolls on the prepared baking sheet, leaving some space between each one.
  6. Optionally, place a slice of banana on top of each roll for extra flavor and decoration.
  7. Bake the coconut flour banana honey rolls in the preheated oven for 20-25 minutes or until they turn golden brown and are cooked through.
  8. Remove the rolls from the oven and let them cool on a wire rack.
