Classic Reuben Corned Beef Sandwich

Ingredients:

  • 8 slices of rye bread
  • 1 pound thinly sliced corned beef
  • 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 1/2 cup Thousand Island dressing
  • Butter or margarine, softened

Instructions:

  1. Preheat a griddle or a large skillet over medium heat.
  2. Butter one side of each slice of rye bread.
  3. On the non-buttered side of four slices of bread, layer the ingredients in this order: Swiss cheese, corned beef, sauerkraut, and Thousand Island dressing.
  4. Top each sandwich with another slice of rye bread, buttered side up.
  5. Place the sandwiches on the heated griddle or skillet. Cook for about 3-4 minutes on each side, or until the bread turns golden brown, and the cheese melts.
  6. Once the sandwiches are done, remove them from the griddle or skillet.
  7. Cut the sandwiches diagonally and serve them while they’re warm.
