Classic Marble Loaf Cake

Ingredients

  • 800 g butter
  • 600 g sugar
  • 6 eggs
  • 200 ml milk
  • 1 tsp. vanilla extract
  • 500 g flour
  • 30 g cocoa powder

Directions

  1. Preheat oven to 150°C. In a large mixing bowl, beat butter until light and creamy, 3 to 4 minutes. Add in sugar, beating until fully combined, 2 to 3 minutes. Add eggs, milk and vanilla, beating until combined.
  2. Turn the electric mixer to low speed and gradually beat in flour. Scrape down the sides of the bowl with a rubber spatula. Divide the batter into two bowls. In one bowl, add cocoa powder, stirring to combine.
  3. Using a large spoon, pour in batter one scoop at a time, alternating the two types of batter (it should look like brown and white spots in the pan) until the loaf pan is filled 3/4 of the way. Use a butter knife to gently swirl the batter, creating a marbleised effect.
  4. Bake until a toothpick or skewer inserted into the centre of the batter comes out mostly clean with just a few crumbs, 78 to 80 minutes. Let cool.
