Chickpea Harvest Burger

Ingredients:

For the chickpea patties:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cup rolled oats (gluten-free if needed)
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)

For assembling the burger:

  • Whole grain burger buns
  • Sliced Swiss cheese or preferred cheese (optional)
  • Sliced apple or pear
  • Baby spinach leaves or arugula
  • Dijon mustard or preferred sauce

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. In a food processor, pulse the chickpeas until partially mashed but still chunky.
  3. Transfer the mashed chickpeas to a mixing bowl. Add rolled oats, grated carrot, finely chopped red onion, minced garlic, chopped parsley, ground cumin, paprika, dried thyme, salt, and pepper. Mix everything together until well combined. The mixture should hold together easily.
  4. Form the mixture into patties of your desired size and thickness. If the mixture seems too wet, add more oats to help bind it.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and crispy. You can also bake them in the oven for approximately 20-25 minutes, flipping halfway through, for a healthier option.
  6. If using cheese, place a slice of Swiss cheese or your preferred cheese on each patty during the last minute of cooking to allow it to melt.
  7. While the patties are cooking, prepare the burger buns by toasting them lightly.
  8. To assemble the Chickpea Harvest Burger, spread Dijon mustard or preferred sauce on the bottom half of the bun. Place the cooked chickpea patty on top. Layer with sliced apple or pear, baby spinach leaves or arugula, or any other desired toppings. Add the top half of the bun.
  9. Serve the burgers immediately and enjoy the combination of savory chickpeas with the sweetness of fruit and the freshness of greens!
