Chickpea Flour Herb Infused Rolls

Ingredients:

  • 2 cups chickpea flour (also known as garbanzo bean flour)
  • 1/2 cup all-purpose flour (or gluten-free flour blend for a gluten-free option)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon dried herbs (such as thyme, rosemary, oregano, or a mix)
  • 2 tablespoons olive oil
  • 1 1/4 cups warm water
  • Optional toppings: additional dried herbs, sesame seeds, or flaky sea salt

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the chickpea flour, all-purpose flour, baking powder, salt, and dried herbs. Mix well to ensure even distribution of the herbs.
  3. Make a well in the center of the dry ingredients and pour in the olive oil and warm water.
  4. Stir the mixture together until a thick, sticky dough forms. The dough will be quite moist but should hold together.
  5. Using slightly wet hands or a spoon, portion the dough into equal-sized portions and shape them into rolls. Place the rolls on the prepared baking sheet, leaving some space between each roll.
  6. Optionally, sprinkle additional dried herbs, sesame seeds, or flaky sea salt on top of each roll for added flavor and decoration.
  7. Bake the chickpea flour herb-infused rolls in the preheated oven for 20-25 minutes or until they turn golden brown and are cooked through.
  8. Remove the rolls from the oven and let them cool on a wire rack before serving.
