Chicken Salad Croissant Sandwich

Ingredients:

For the Chicken Salad:

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup dried cranberries or grapes, halved
  • 1/4 cup mayonnaise

  • Croissants, sliced horizontally
  • Lettuce leaves
  • Sliced tomatoes (optional)

Instructions:

  1. In a mixing bowl, combine the cooked chicken, celery, red onion, and dried cranberries or grapes.
  2. In a separate small bowl, mix together the mayonnaise, Greek yogurt (or more mayonnaise), Dijon mustard, lemon juice, garlic powder, salt, and pepper to create the dressing.
