Cauliflower Crunch Burger

Ingredients:

For the cauliflower patties:

  • 1 head of cauliflower, cut into florets
  • 1/2 cup breadcrumbs (regular or gluten-free)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 teaspoon dried Italian seasoning (or a mix of dried herbs like oregano, basil, thyme)
  • Salt and pepper to taste
  • Olive oil for cooking

For assembling the burger:

  • Whole grain burger buns
  • Sliced red cabbage or coleslaw mix
  • Sliced tomato
  • Avocado slices
  • Sriracha mayo or preferred sauce

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Steam or boil the cauliflower florets until they are tender but not mushy. Drain them well and pat them dry using paper towels to remove excess moisture.
  3. In a large mixing bowl, mash the cooked cauliflower using a potato masher or fork until it reaches a mashed potato-like consistency.
  4. Add breadcrumbs, grated Parmesan cheese (if using), minced garlic, eggs, dried Italian seasoning, salt, and pepper to the mashed cauliflower. Mix everything together until well combined and forms a dough-like consistency.
  5. Divide the mixture into equal portions and shape them into patties of your desired size and thickness.
  6. Place the patties on the prepared baking sheet. Lightly brush both sides of the patties with olive oil.
  7. Bake the cauliflower patties in the preheated oven for about 25-30 minutes, flipping them halfway through, until they are golden brown and crispy on the outside.
  8. While the patties are baking, prepare the burger buns by toasting them lightly.
  9. To assemble the Cauliflower Crunch Burger, spread Sriracha mayo or preferred sauce on the bottom half of the bun. Place the baked cauliflower patty on top. Layer with sliced red cabbage or coleslaw mix, tomato slices, avocado slices, or any other desired toppings. Add the top half of the bun.
  10. Serve the burgers immediately and enjoy the crispy texture and delicious flavors of the cauliflower patties!
