Buckwheat Sweet Potato Rolls

Ingredients:

  • 1 cup mashed sweet potatoes (from about 2 medium sweet potatoes)
  • 1/4 cup warm water
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup honey or maple syrup
  • 1/4 cup olive oil or melted butter
  • 1 teaspoon salt
  • 2 cups buckwheat flour
  • 1 1/2 cups all-purpose flour (plus more for dusting)
  • Additional olive oil or melted butter for brushing (optional)

Instructions:

  1. Begin by cooking the sweet potatoes. You can peel, cube, and boil them until tender, then mash them thoroughly. Let the mashed sweet potatoes cool to room temperature.
  2. In a small bowl, combine the warm water and honey or maple syrup. Sprinkle the active dry yeast over the water mixture and let it sit for about 5-10 minutes until it becomes frothy.
  3. In a large mixing bowl, combine the mashed sweet potatoes, olive oil or melted butter, salt, and the activated yeast mixture.
  4. Gradually add the buckwheat flour and all-purpose flour to the wet ingredients, mixing well to form a soft dough. Add more flour if needed until the dough comes together and isn’t too sticky.
  5. Turn the dough out onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. Add more flour if necessary to prevent sticking.
  6. Place the dough in a greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
  7. Once the dough has risen, punch it down gently to release the air bubbles.
  8. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  9. Divide the dough into equal-sized portions and shape them into rolls. Place the rolls on the prepared baking sheet, leaving some space between each roll.
  10. Optionally, brush the rolls with a little olive oil or melted butter for a golden finish.
  11. Bake the buckwheat sweet potato rolls in the preheated oven for 20-25 minutes or until they turn golden brown and sound hollow when tapped on the bottom.
  12. Remove the rolls from the oven and let them cool on a wire rack.
