Almond Flour Protein Rolls

Ingredients:

  • 2 cups almond flour
  • 1/4 cup whey protein powder (vanilla or unflavored)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/4 cup unsweetened almond milk (or any milk of your choice)
  • 2 tablespoons olive oil (or melted butter)
  • Optional toppings: sesame seeds, poppy seeds, or flax seeds

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, whey protein powder, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs.
  4. Add the beaten eggs, almond milk, and olive oil to the dry ingredients. Mix well until a dough forms. The dough will be sticky, but if it’s too wet, you can add a little more almond flour.
  5. Divide the dough into equal-sized portions and shape them into rolls. Place the rolls on the prepared baking sheet, leaving some space between each roll.
  6. Optionally, brush the tops of the rolls with a little almond milk and sprinkle sesame seeds, poppy seeds, or flax seeds on top for added flavor and texture.
  7. Bake the almond flour protein rolls in the preheated oven for 20-25 minutes or until they turn golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the rolls from the oven and let them cool on a wire rack.

These almond flour protein rolls are dense, hearty, and perfect for those looking for a gluten-free, high-protein option. Enjoy them as a side to meals or use them as a base for sandwiches. They offer a nutritious alternative to traditional rolls!
