All-American Thin-Cut French Fries

Ingredients:

  • 4 large russet potatoes
  • Vegetable oil or peanut oil for frying
  • Salt (to taste)

Instructions:

  1. Wash the potatoes thoroughly and scrub off any dirt. Leave the skins on for added texture and flavor if desired.
  2. Using a sharp knife or a mandoline slicer, slice the potatoes into thin, uniform strips. Aim for fries about 1/4 inch wide.
  3. Place the cut fries in a bowl of cold water and let them soak for about 30 minutes. This step helps remove excess starch, which contributes to crispier fries.
  4. Drain the fries and pat them completely dry using a kitchen towel or paper towels.
  5. Heat the oil in a deep fryer or a large, heavy-bottomed pot to around 350-375°F (175-190°C).
  6. Fry the potatoes in batches to ensure even cooking. Fry for about 2-3 minutes per batch, or until they are golden brown and crispy.
  7. Use a slotted spoon or spider strainer to remove the fries from the oil and transfer them to a paper towel-lined tray to drain excess oil. Immediately season them with salt while they’re still hot.
