Air Fryer Avocado Fries

Ingredients:

  • 2 large ripe avocado
  • 1/3 cup almond flour
  • 1/4 cup grated Parmesan
  • 1/2 tsp Italian seasoning
  • 1/4 tsp pink himalayan salt
  • 1/8 tsp black pepper
  • 1 large egg
  • 1 tbsp water

Instructions:

  1. First slice the avocados, making about 4-5 thick slices per half of avocado. Set aside.
  2. In one shallow bowl mix the almond flour, Parmesan cheese, and seasonings.
  3. In another shallow bowl add the egg and water and mix until you make an egg bath all foamy/fluffy.
  4. Dredge the avocado carefully into the egg mixture and then into the flour/cheese mixture. Set aside on a plate and repeat for all slices.
  5. Set the air fryer to 400°F and allow to preheat for 2-3 minutes.
  6. Spray the preheated air fryer with some coconut oil spray and place the slices in the air fryer basket in a single layer.
  7. Cook for 4 minutes and turn over and cook for an additional 2-3 minutes.
