Curry Vegetable Stuffed Rolls

Ingredients:

For the filling:

  • 2 tablespoons oil (olive oil or vegetable oil)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon curry powder (adjust to taste)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric powder
  • 2 cups mixed vegetables (such as carrots, peas, bell peppers, etc.), finely chopped
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

For the rolls:

  • 1 sheet puff pastry, thawed according to package instructions
  • Egg wash (1 egg beaten with 1 tablespoon water)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat oil in a skillet over medium heat. Add chopped onions and sauté until translucent.
  3. Add minced garlic and ginger, and cook for another minute until fragrant.
  4. Stir in the curry powder, ground cumin, ground coriander, and turmeric powder. Cook for a minute to toast the spices.
  5. Add the mixed vegetables to the skillet and cook until they are tender but still have a slight crunch. Season with salt and pepper to taste. Stir in chopped cilantro if using. Remove from heat and let the mixture cool.
  6. On a lightly floured surface, roll out the puff pastry sheet into a rectangle.
  7. Spread the cooled curry vegetable mixture evenly over the entire surface of the puff pastry sheet.
  8. Starting from one long edge, tightly roll up the puff pastry sheet into a log.
  9. Use a sharp knife to slice the log into approximately 1-inch thick rolls.
  10. Place the rolls on the prepared baking sheet, cut-side down, leaving some space between each roll.
  11. Brush the tops of the rolls with the egg wash using a pastry brush.
  12. Bake in the preheated oven for 15-20 minutes or until the rolls are puffed and golden brown.
  13. Once done, remove the rolls from the oven and let them cool slightly on a wire rack before serving.
