Hot And Sour Shrimp Soup Recipe

Ingredients

  • Light chicken stock 3 cups
  • Prawns, shelled and de-veined 250 g
  • Garlic cloves, minced 2
  • Ginger, fresh 3 thin slices
  • Fish sauce 1/4 cup
  • Lemon grass, lower 1/3 portion only 2 stalks
  • Green onions, sliced 2
  • Mushrooms, sliced 1/2 cup
  • Lime juice 1/4 cup
  • Chilli paste, roasted 1 tsp
  • Coriander leaves, chopped 1 tbsp

Method

  • Bring the stock to a boil over medium heat.
  • Add the ginger, garlic, fish sauce, lemon grass, green onions, mushrooms.
  • Simmer for 2 minutes.
  • Add the shrimps and reheat into boiling.
  • Cook until the shrimps are pink, opaque and firm but no longer than 1 minute.
  • When the shrimps are cooked, pour the lime juice, chilli paste in a serving bowl.
  • Pour the soup into the bowl, stir and garnish with coriander leaves.
