Caprese Ciabatta with Fresh Mozzarella

Ingredients:

  • 1 large ciabatta loaf or ciabatta rolls, sliced horizontally
  • 2 large ripe tomatoes, thinly sliced
  • 8 ounces fresh mozzarella cheese, thinly sliced
  • Fresh basil leaves
  • Extra-virgin olive oil
  • Balsamic glaze or balsamic reduction (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Slice the ciabatta loaf horizontally to open it up for sandwich assembly. If using ciabatta rolls, cut them in half.
  3. Layer the bottom half of the ciabatta with the thinly sliced tomatoes.
