Ingredients:
For the fried chicken:
- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Vegetable oil for frying
For the biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 3/4 cup buttermilk
For assembling the sandwiches:
- Fried chicken breasts
- Biscuits (sliced in half)
- Honey, optional
- Sliced pickles, optional
Instructions:
- Marinate the chicken breasts: Place the chicken breasts in a bowl and pour the buttermilk over them. Let them marinate in the refrigerator for at least 1 hour or preferably overnight.
- Prepare the biscuits: Preheat your oven to 425°F (220°C). In a mixing bowl, whisk together the flour, baking powder, and salt. Add the chilled, cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs. Pour in the buttermilk and stir until just combined. Do not overmix. Turn the dough out onto a floured surface and gently knead it a few times. Roll out the dough to about 1-inch thickness and cut into biscuit shapes using a biscuit cutter or a round glass. Place the biscuits on a baking sheet lined with parchment paper and bake for about 12-15 minutes, or until golden brown.
- Prepare the fried chicken: In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Remove the chicken breasts from the buttermilk and dredge them in the seasoned flour mixture, ensuring they are evenly coated. Heat vegetable oil in a skillet over medium-high heat. Fry the chicken breasts for about 5-6 minutes per side or until they are golden brown and cooked through. Remove the chicken from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Assemble the sandwiches: Take a biscuit and place a fried chicken breast on the bottom half. Optionally, drizzle a bit of honey over the chicken for a touch of sweetness and add sliced pickles for some tangy flavor. Top with the other half of the biscuit.
