Ingredients:
For the caramelized onions:
- 2 large onions, thinly sliced
- 2 tablespoons unsalted butter

Instructions:
- Caramelize the onions: In a large skillet, heat the butter and olive oil over medium-low heat. Add the thinly sliced onions and cook them slowly, stirring occasionally, until they turn golden brown and caramelized, about 25-30 minutes. Season with salt and pepper to taste. Once done, set aside to cool.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry sheet into a rectangle.
- Spread the caramelized onions evenly over the entire surface of the puff pastry sheet.
- Sprinkle the grated Gruyere cheese over the caramelized onions, covering the entire sheet.
- Starting from one long edge, tightly roll up the puff pastry sheet into a log.
- Use a sharp knife to slice the log into approximately 1-inch thick rolls.
- Place the rolls on the prepared baking sheet, cut-side down, leaving some space between each roll.
- Brush the tops of the rolls with the egg wash using a pastry brush. This will give them a nice golden color when baked.
- Bake in the preheated oven for 15-20 minutes or until the rolls are puffed and golden brown.
- Once done, remove the rolls from the oven and let them cool slightly on a wire rack before serving.
