Ingredients:
For the dough:
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1 cup warm water (about 110°F/43°C)
- 1 tablespoon granulated sugar
- 3 cups all-purpose flour
- 1/4 cup olive oil
- 1 teaspoon salt
For the spinach and feta filling:
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- In a small bowl, combine the warm water, granulated sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour, olive oil, salt, and the activated yeast mixture. Mix until a dough forms.
- Turn the dough out onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. Add more flour if needed, but keep the dough slightly tacky.
- Place the dough in a greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
- Meanwhile, prepare the spinach and feta filling. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and sauté until it wilts and any excess moisture evaporates. Season with salt and pepper to taste. Remove from heat and let it cool slightly.
- In a bowl, combine the sautéed spinach, crumbled feta cheese, grated Parmesan cheese, and mix well.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Once the dough has risen, punch it down gently and divide it into equal-sized portions.
- Flatten each portion of dough into a circle and place a spoonful of the spinach and feta filling in the center.
- Fold the edges of the dough over the filling and pinch them together to seal, forming a ball. Place the stuffed rolls on the prepared baking sheet, seam side down.
- Cover the rolls loosely with a kitchen towel and let them rise for another 30-45 minutes, or until they have slightly puffed up.
- Bake the spinach and feta stuffed rolls in the preheated oven for 20-25 minutes or until they turn golden brown.
- Remove the rolls from the oven and let them cool slightly before serving.
These spinach and feta stuffed rolls are savory, flavorful, and make a delightful addition to your meal or a tasty snack. Enjoy the combination of spinach, feta, and Parmesan cheese inside these delicious rolls!
