Teff Seed Multigrain Rolls

Ingredients:

  • 1 cup teff flour
  • 1 cup whole wheat flour
  • 1/2 cup oat flour
  • 1/4 cup flaxseeds (ground or whole)
  • 2 tablespoons chia seeds
  • 2 tablespoons sunflower seeds
  • 2 tablespoons pumpkin seeds
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 tablespoon honey or maple syrup
  • 1 1/4 cups warm water
  • 2 tablespoons olive oil
  • Additional seeds for topping (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the teff flour, whole wheat flour, oat flour, flaxseeds, chia seeds, sunflower seeds, pumpkin seeds, instant yeast, and salt. Mix well to distribute the seeds and dry ingredients evenly.
  3. In a separate bowl, whisk together the honey or maple syrup, warm water, and olive oil.
  4. Gradually pour the wet ingredients into the dry ingredients while stirring. Mix until a soft, slightly sticky dough forms. If the dough is too dry, add a little more warm water.
  5. Let the dough rest for about 10 minutes to allow the flours and seeds to absorb the moisture.
  6. Divide the dough into equal-sized portions and shape them into rolls. Place the rolls on the prepared baking sheet, leaving some space between each roll.
  7. Optionally, brush the tops of the rolls with water and sprinkle additional seeds on top for extra texture.
  8. Bake the teff seed multigrain rolls in the preheated oven for 20-25 minutes or until they turn golden brown and sound hollow when tapped on the bottom.
  9. Remove the rolls from the oven and let them cool on a wire rack.
