Ingredients:
- 1 cup cooked quinoa, cooled
- 1 tablespoon chia seeds
- 1 1/4 cups warm water
- 2 1/4 teaspoons (1 packet) active dry yeast
- 2 tablespoons honey or maple syrup
- 1/4 cup olive oil
- 1 teaspoon salt
- 3 1/2 – 4 cups whole wheat flour (or a mix of whole wheat and all-purpose flour)

Instructions:
- In a small bowl, combine the chia seeds and warm water. Let them sit for about 5-10 minutes until the chia seeds absorb the water and form a gel-like consistency.
- In a large mixing bowl, dissolve the honey or maple syrup in warm water. Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until it becomes frothy.
- Add the olive oil, salt, cooked quinoa, and chia seed mixture to the yeast mixture. Mix well.
- Gradually add the whole wheat flour, about 1 cup at a time, mixing until a soft dough forms.
- Turn the dough out onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. Add more flour if needed, but keep the dough slightly tacky.
- Place the dough in a greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
- Once the dough has risen, punch it down gently to release the air bubbles.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Divide the dough into equal-sized portions and shape them into rolls. Place the rolls on the prepared baking sheet, leaving some space between each roll.
- Cover the rolls loosely with a clean kitchen towel and let them rise for another 30-45 minutes, or until they have doubled in size.
- Optionally, brush the rolls with a little olive oil and sprinkle chia seeds on top for added texture and nutrition.
- Bake the quinoa chia seed power rolls in the preheated oven for 15-20 minutes or until they turn golden brown.
- Remove the rolls from the oven and let them cool on a wire rack.
