Roasted Vegetable Medley Pizza

Ingredients:

  • 1 pound (about 450g) pizza dough (store-bought or homemade)
  • Cornmeal or flour for dusting
  • 1 ½ cups pizza sauce or marinara sauce
  • 2 cups shredded mozzarella cheese or vegan cheese (if preferred)
  • Assorted fresh vegetables for roasting:
    • Sliced bell peppers (red, yellow, and/or green)
    • Sliced zucchini or yellow squash
    • Sliced eggplant
    • Sliced red onions
    • Cherry tomatoes
    • Sliced mushrooms
    • Fresh basil leaves
    • Olive oil
    • Salt and pepper to taste
    • Garlic powder (optional)
    • Dried oregano or Italian seasoning

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the vegetables for roasting by slicing them into bite-sized pieces. Place them on a baking sheet lined with parchment paper.

  10. Arrange the roasted vegetable medley over the pizza, distributing them evenly.
  11. Sprinkle dried oregano or Italian seasoning over the vegetables for added flavor.
  12. Carefully transfer the pizza to the preheated oven. If using a pizza stone, slide the pizza onto the hot stone. Otherwise, place the baking sheet with the pizza in the oven.
  13. Bake for about 12-15 minutes or until the crust is golden brown, the cheese is melted (if using), and the toppings are heated through.
  14. Once done, remove the pizza from the oven and let it cool for a minute or two.
  15. Garnish with fresh basil leaves for added freshness.
  16. Slice the pizza and serve hot.
