Peri-Peri Spicy Fried Chicken

Ingredients:

For the Chicken:

  • 4-6 chicken pieces (thighs, drumsticks, breasts)
  • Salt and pepper, to taste

For the Peri-Peri Marinade:

  • 4-6 red chili peppers (use peri-peri chilies if available), seeded and roughly chopped
  • 4 cloves garlic, minced
  • 1 small onion, roughly chopped
  • 1 lemon, juiced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

For Frying:

  • Vegetable oil for frying

Instructions:

  1. Marinate the Chicken:
    • Make a few shallow cuts in the chicken pieces to allow the marinade to penetrate.
    • Season the chicken with salt and pepper.
  2. Prepare the Peri-Peri Marinade:
    • In a blender or food processor, combine the chopped chili peppers, minced garlic, chopped onion, lemon juice, red wine vinegar, olive oil, smoked paprika, dried oregano, dried thyme, salt, and pepper. Blend until you get a smooth marinade.
  3. Marinate the Chicken:
    • Place the chicken pieces in a large resealable plastic bag or a bowl.

    • Remove the chicken pieces from the marinade, allowing any excess to drip off.
    • Carefully place the chicken pieces into the hot oil, a few at a time, without overcrowding the pan. Fry the chicken for about 12-15 minutes per side, or until golden brown and cooked through. Ensure the internal temperature of the chicken reaches 165°F (74°C). Fry the chicken in batches if necessary. Once cooked, transfer to a wire rack to drain excess oil.
