Instructions:
- Season the chicken: Pat dry the chicken pieces and season them with salt and pepper. Set aside while preparing the batter.
- Prepare the batter: In a mixing bowl, combine the all-purpose flour, cornstarch, and baking powder. Make a well in the center and add the beaten egg and ice-cold water. Gently mix the ingredients until just combined, being careful not to overmix (some lumps are okay). The batter should be somewhat thin and airy.
- Keep the batter cold: To ensure the batter stays cold, place ice cubes in a larger bowl and set the mixing bowl with the batter on top. This helps keep the batter chilled, maintaining its light and crispy texture when frying.
- Heat the oil: In a deep pot or wok, heat vegetable oil to around 350-375°F (175-190°C). Use enough oil to fully submerge the chicken pieces during frying.
- Coat the chicken: Dip each seasoned chicken piece into the tempura batter, allowing any excess batter to drip off. Carefully place the coated chicken into the hot oil. Work in batches to avoid overcrowding the pot.
- Fry the chicken: Fry the chicken pieces for about 3-5 minutes or until they turn golden brown and are cooked through. The internal temperature of the chicken should reach 165°F (74°C). Use a slotted spoon or tongs to remove the cooked chicken and place them on a wire rack or paper towels to drain excess oil.
- Serve: Serve the tempura fried chicken immediately while hot and crispy. Optionally, serve with dipping sauce on the side.
