Japanese Karaage Chicken

Ingredients:

  • 1 pound boneless, skinless chicken thighs or breast, cut into bite-sized pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons sake (Japanese rice wine) or dry sherry
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 cup potato starch or cornstarch (for coating)
  • Vegetable oil for frying
  • Optional: Lemon wedges, for serving

Instructions:

  1. Marinate the chicken: In a bowl, combine the soy sauce, sake (or sherry), grated ginger, minced garlic, sesame oil, and sugar. Add the chicken pieces to the marinade and mix well to ensure all the pieces are coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for better flavor absorption.
  2. Heat the oil: In a deep skillet or pot, heat vegetable oil to around 350°F (175°C) over medium-high heat. Use enough oil to submerge the chicken pieces while frying.
  3. Prepare the coating: Place the potato starch or cornstarch in a shallow dish or bowl.
  4. Coat the chicken: Remove the marinated chicken pieces from the bowl, allowing any excess marinade to drip off. Coat each piece of chicken thoroughly in the potato starch or cornstarch, shaking off excess coating.
  5. Fry the chicken: Carefully place the coated chicken pieces into the hot oil, a few at a time, without overcrowding the pan. Fry the chicken for about 5-7 minutes or until golden brown and cooked through. Ensure the chicken is fully cooked; the internal temperature should reach 165°F (74°C). Fry the chicken in batches if necessary.
  6. Drain and serve: Once cooked, transfer the fried chicken to a wire rack or paper towels to drain excess oil.
  7. Serve warm: Optionally, serve the Karaage Chicken with lemon wedges on the side for squeezing over the chicken pieces before eating.
