Instructions:
- Prepare the chicken: Rinse the chicken pieces and pat them dry with paper towels. Season the chicken with salt and pepper.
- Marinate the chicken: Place the chicken pieces in a large bowl and pour the buttermilk over them, ensuring they are completely covered. Cover the bowl and refrigerate for at least 2 hours, or ideally overnight. This helps tenderize the chicken and adds flavor.
- Prepare the coating: In a shallow dish or large resealable plastic bag, mix the flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
- Coat the chicken: Remove the chicken from the buttermilk marinade, allowing any excess to drip off. Dredge each piece of chicken in the seasoned flour mixture, ensuring it’s evenly coated. Press the flour mixture onto the chicken to help it adhere.
- Heat the oil: In a large, heavy-bottomed skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C) over medium-high heat.
- Fry the chicken: Carefully place the coated chicken pieces into the hot oil, a few at a time, without overcrowding the pan. Use a meat thermometer to ensure doneness.
