Ingredients:
- 1 cup cooked quinoa
- 2 cups finely chopped kale leaves (stems removed)
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup bread crumbs or almond meal
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
Instructions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
- In a food processor, pulse the chickpeas until they are partially mashed but still have some texture. Transfer them to a large mixing bowl.
- In the same food processor, pulse the kale leaves until finely chopped.
- Add the chopped kale, cooked quinoa, red onion, minced garlic, chopped parsley, bread crumbs or almond meal, cumin, paprika, salt, and black pepper to the bowl with the mashed chickpeas. Mix everything thoroughly until well combined. If the mixture seems too dry, you can add a tablespoon of water or olive oil to help bind it together.
- Shape the mixture into patties of your desired size and thickness. Place them on the prepared baking sheet.
- Brush the patties lightly with olive oil on both sides. This will help them crisp up while baking.
- Bake the patties in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy on the outside.
- Once done, remove the patties from the oven and let them cool for a few minutes before serving.
These Quinoa Kale Power Patties can be served on a bun as a burger, paired with salad, or enjoyed in a variety of ways. They are packed with protein, fiber, and nutrients from the quinoa, chickpeas, and kale, making them a delicious and wholesome option for a meatless meal.
