Garden Delight Burger

Ingredients:

For the veggie patty:

  • 1 can (15 oz) of black beans, drained and rinsed (or any preferred beans)
  • 1 cup cooked quinoa (or other cooked grains like brown rice)
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)

For assembling the burger:

  • Whole grain burger buns
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced red onion
  • Avocado slices
  • Vegan mayo or preferred sauce
  • Optional: Vegan cheese slices

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, mash the black beans until mostly smooth. Add cooked quinoa, chopped mushrooms, onion, garlic, cumin, paprika, chili powder, salt, and pepper. Mix everything well until combined.
  3. Form the mixture into burger-sized patties. If the mixture is too wet, add a little bit of breadcrumbs or additional cooked quinoa to help bind it.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are browned and crispy.
  5. If using vegan cheese, place a slice on top of each patty during the last minute of cooking to allow it to melt.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly.
  7. To assemble the Garden Delight Burger, spread vegan mayo or preferred sauce on the bottom half of the bun. Place the cooked patty on top. Layer with lettuce leaves, tomato slices, red onion slices, avocado slices, or any other desired toppings. Add more sauce on the top half of the bun if desired.
  8. Serve the Garden Delight Burger immediately and enjoy!

Feel free to customize this recipe by adding different spices, herbs, or vegetables to the patty mixture. You can also grill the patties instead of cooking them on the stovetop if you prefer.
